Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, combine cream cheese, Parmesan, mozzarella, spinach, garlic, 1/2 teaspoon of salt, and pepper until the mixture is thick and creamy.
- Slice horizontally into each chicken breast to create a pocket, making sure not to cut all the way through.
- Generously stuff each pocket with the delicious spinach and cheese mixture. If needed, secure the openings with toothpicks.
- Season the exterior of the chicken breasts with chili powder or paprika, garlic powder, onion powder, and the remaining 1/2 teaspoon of salt.
Cooking
- Heat olive oil in a large oven-safe skillet over medium-high heat, then sear the chicken for 2–3 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20–25 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- Before serving, remember to remove any toothpicks and enjoy the savory goodness!
Notes
Leftover Cream Cheese Spinach Stuffed Chicken Breast can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply place it in the oven at 350°F (175°C) for about 15 minutes or until warmed through. For meal prep, these stuffed chicken breasts reheat beautifully.
