Ingredients
  

For the salad
  • 1 whole cucumber, thinly sliced
  • 1 small onion, thinly sliced
  • 150 g crispy baked tofu or other protein of choice Approximately 1 large handful.
  • 1/3 cup edamame, shelled and thawed
  • 1 small carrot, julienned
  • 1 spring onion sliced
  • 1/2 avocado cut into 1 cm cubes
For the dressing
  • 1 tbsp vegan cream cheese
  • 1 tbsp vegan mayo
  • 1 tbsp Sriracha
  • 1 tsp chili-crisp oil
  • 1 tbsp soy sauce Use gluten-free soy sauce to make it gluten-free.
  • 1 tbsp sesame seeds
  • 1-2 tsp crushed nori flakes Optional for a subtle sushi flavor.

Method
 

Assembly
  1. Start by placing the thinly sliced cucumber at the bottom of the jar. Press it lightly to create a firm base.
  2. Layer the sliced onion on top, followed by the crispy tofu.
  3. Next, add the edamame, julienned carrot, spring onion, and avocado cubes in order.
  4. For meal prep, keep your saucy ingredients (like the cream cheese and Sriracha) towards the top to maintain the crispness of the veggies.
  5. Screw the lid on tightly to prevent leaks and refrigerate upright if you aren’t eating it immediately.
  6. Allow the jar to rest—this lets the tofu absorb flavors while the toppings like sesame seeds can stay dry.
  7. When you’re ready to enjoy, flip the jar upside down twice, then shake vigorously for about 10 seconds to evenly distribute the dressing.
  8. You can eat the salad straight from the jar, or tip the contents into a bowl for easier tossing.

Notes

Store in an airtight container in the refrigerator. Best enjoyed within 2 to 3 days. Keep the dressing separate until ready to eat to prevent sogginess.
