  • 200 g ramen noodles Whole grain ramen noodles can be used.
  • 1 cup fresh vegetables (spinach, carrots, bell peppers) Feel free to swap with other fresh vegetables.
  • 4 cloves garlic, minced Don’t skimp on the garlic for aromatic quality.
  • 1 cup heavy cream Can substitute with half-and-half or coconut milk.
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • to taste salt and pepper Adjust seasoning before serving.

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add sliced chicken breasts and cook until browned and cooked through.
  3. Toss in minced garlic and sauté for 1-2 minutes, until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer.
  5. Add ramen noodles and cook according to package instructions until tender.
  6. Stir in heavy cream and soy sauce, then add fresh vegetables, cooking until tender.
  7. Season with salt and pepper to taste.
  8. Serve in bowls and garnish with chopped green onions.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stove, adding a splash of broth for texture. This dish can be frozen but best stored with broth and noodles separately to avoid mushiness.
