  • 500 grams Gnocchi
  • 300 grams Fresh spinach
  • 200 grams Feta cheese
  • 1 tablespoon Olive oil For sautéing
  • 2 cloves Garlic Minced
  • 200 ml Heavy cream
  • to taste Salt
  • to taste Pepper
  • optional Parmesan cheese For topping

Method
 

Cooking the Gnocchi
  1. Cook the gnocchi according to package instructions. Drain and set aside.
Sautéing the Spinach
  1. In a large skillet, heat a tablespoon of olive oil over medium heat.
  2. Add in minced garlic and sauté until fragrant—about 1 minute.
  3. Toss in fresh spinach and sauté until it’s wilted down.
Making the Creamy Sauce
  1. Pour in heavy cream and bring the mixture to a gentle simmer.
  2. Crumble feta cheese into the skillet along with salt and pepper to taste.
  3. Stir until the cheese melts, creating a creamy sauce.
Combining Ingredients
  1. Add the cooked gnocchi to the skillet and toss until every piece is well coated in the rich sauce.
  2. Serve warm, topped with freshly grated Parmesan cheese if desired.

Notes

For a zesty kick, add a squeeze of lemon juice before serving. Feel free to use gluten-free gnocchi or vegan feta if needed. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
