Creamy White Chicken Enchiladas

Ingredients
  

For the Filling
  • 3 cups cooked shredded chicken (using rotisserie works wonderfully)
  • 8-10 medium flour tortillas
  • 1 small onion, diced
  • 1/2 cup diced green chiles (canned or fresh)
  • 1/4 cup chopped fresh cilantro
  • 2 cups shredded Monterey Jack cheese (divided)
  • 1 cup shredded cheddar cheese (divided)
For the White Sauce
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour (for the roux)
  • 2 cups chicken broth (for the white sauce)
  • 1 cup sour cream (room temperature)
  • 1/2 teaspoon ground cumin
  • to taste salt and pepper

Method
 

Preparation
  1. Melt butter in a large saucepan over medium heat.
  2. Whisk in the flour and cook for about 1 minute until it forms a smooth, golden paste.
  3. Gradually whisk in the chicken broth to the roux, minimizing lumps, until the sauce thickens (about 3-4 minutes).
  4. Remove from heat and stir in the sour cream, cumin, salt, and pepper until well combined.
  5. In a mixing bowl, combine the shredded chicken, diced onion, green chiles, cilantro, and 1 cup of cheese mixture. Mix well.
  6. Preheat your oven to 350°F (175°C).
Assembling
  1. Spread a thin layer of white sauce on the bottom of a greased 9x13 baking dish.
  2. Place about 1/3 cup of the chicken mixture down the center of each tortilla, roll tightly, and place seam-side down in the dish.
  3. Pour the remaining white sauce over the rolled enchiladas, covering them completely.
  4. Sprinkle with the remaining Monterey Jack and cheddar cheese.
Baking
  1. Bake uncovered for 25-30 minutes, or until the sauce bubbles around the edges and the cheese is golden brown.
  2. Let enchiladas sit for about 5 minutes before serving.

Notes

Serve with a fresh side salad, avocado slices, or tortilla chips. A drizzle of salsa Verde or guacamole enhances the flavor.
