Preparation
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream and vanilla extract over medium heat until it just begins to simmer.
- In a bowl, whisk together the egg yolks and sugar until the mixture is pale and thick.
- Gradually add the warm cream to the yolks, whisking constantly to combine.
- Pour the mixture through a fine-mesh strainer into a measuring cup or bowl.
Baking
- Divide the custard mixture into ramekins.
- Place the ramekins in a baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Bake for about 30–40 minutes, or until the custards are set but still slightly jiggly in the center.
- Remove the ramekins from the water and let them cool. Refrigerate for at least 2–4 hours or overnight.
Caramelizing and Serving
- Sprinkle a thin, even layer of granulated sugar over the chilled custards.
- Using a kitchen torch, caramelize the sugar until it melts and forms a crust. Alternatively, place under a broiler for 1–2 minutes.
- Allow the sugar crust to cool for about 1–2 minutes before serving.
- Garnish with fresh berries, whipped cream, edible flowers, and shaved chocolate as desired.
Notes
Serve crème brûlée chilled with a warm, crisp topping for the best contrast in texture. Experiment with different toppings and serving techniques to add a personal touch.
