Preparation
- Preheat the oven to 325°F (160°C).
- In a saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat.
- In a bowl, whisk together the egg yolks and sugar until smooth and pale.
- Slowly pour the hot cream into the egg mixture while whisking constantly to temper the eggs.
- Add the vanilla extract and mix well.
- Strain the mixture through a fine-mesh sieve into a pitcher to remove any lumps.
- Pour the custard mixture into ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for about 30-40 minutes or until the custard is set, but jiggles slightly in the center.
- Remove from the oven and let cool before refrigerating for at least 2-4 hours.
Serving
- Sprinkle about 1 teaspoon of granulated sugar evenly over the chilled custard.
- Use a kitchen torch to caramelize the sugar until it melts and turns golden brown. If using a broiler, place the ramekins under the broiler for 1-2 minutes, watching closely.
- Let sit for 1-2 minutes to cool before serving.
- Garnish as desired with fresh berries, whipped cream, or edible flowers.
