Crispy Dill Pickle Parmesan Chicken

Ingredients
  

For the chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup dill pickle juice (from a jar of pickles) Used for marinating
For the breading
  • 1 cup seasoned breadcrumbs Can be gluten-free if needed
  • 1/2 cup grated Parmesan cheese Can substitute for dairy-free options
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • to taste Salt and pepper
  • as needed for frying Cooking oil

Method
 

Marinate the Chicken
  1. Place the chicken breasts in a shallow dish or zip-top bag. Cover them in dill pickle juice and let marinate in the fridge for 30 minutes to 2 hours.
Prepare Breading Stations
  1. While your chicken is marinating, set up three shallow dishes. In the first dish, mix the flour with garlic powder, onion powder, paprika, salt, and pepper. The second dish will contain the whisked eggs, and in the last one, combine the Parmesan with the seasoned breadcrumbs.
Dredge the Chicken
  1. After marinating, take the chicken out and pat it dry. Dredge each piece in the flour mixture, then dip it in the egg, and finally press it into the breadcrumb-Parmesan mixture until well coated.
Fry the Chicken
  1. Heat about half an inch of cooking oil in a large skillet over medium-high heat. Fry the chicken for about 5–7 minutes per side, or until golden brown and fully cooked (an internal temperature of 165°F).
Drain and Rest
  1. Once cooked, transfer the chicken to a wire rack to drain excess oil. Let it rest for a few minutes before serving hot.

Notes

Store any uneaten chicken in an airtight container in the fridge for up to 3 days. For longer storage, freeze in a freezer-safe container for up to three months. Reheat thoroughly before serving.
