  • 1 lb beef (sliced thin) Use your preferred cut of beef.
  • 1 bell pepper (sliced) Any color of bell pepper works well.
  • 1 onion (sliced) Yellow or white onions can be used.
  • 1 cup mushrooms (sliced) Feel free to use any mushrooms you like.
  • 1 package tortellini (cheese or meat-filled) Can use frozen tortellini.
  • 1 cup beef broth Ensure it is gluten-free if needed.
  • 1 cup heavy cream For a richer taste.
  • 1 cup provolone cheese (shredded) Substitute with mozzarella or gouda if desired.
  • Salt and pepper to taste Adjust according to preference.

Method
 

Preparation
  1. Combine the sliced beef, bell pepper, onion, and mushrooms in your slow cooker.
  2. Pour the beef broth over the top of the ingredients.
  3. Cover your Crock Pot and cook on low for 6-8 hours, or until the beef is tender.
  4. About 30 minutes before serving, add the tortellini and heavy cream.
  5. Stir well and allow the tortellini to heat through.
  6. Mix in the shredded provolone cheese until melted, and season with salt and pepper to taste.

Notes

Serve warm in large bowls with garlic bread or a light salad. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days, or frozen for later use.
