  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet chili seasoning
  • 2 cups chicken broth
  • Salt and pepper to taste

Preparation
  1. Place the chicken breasts at the bottom of your slow cooker.
  2. In a mixing bowl, combine cream cheese, black beans, corn, diced tomatoes, chili seasoning, and chicken broth.
  3. Pour this creamy mixture over the chicken.
  4. Cover and cook on low for 6 to 8 hours, or high for 3 to 4 hours.
  5. Before serving, shred the chicken with two forks and give everything a good stir.
  6. Serve hot, garnished with your favorite toppings like cheese, sour cream, or fresh cilantro.

Notes

Store leftovers in an airtight container for up to 4 days in the fridge or freeze in portions for up to three months. To lighten the dish, swap cream cheese for Greek yogurt or turkey for chicken.
