  • 1 pound ground beef Can substitute with ground turkey for a leaner option.
  • 1 can black beans, drained and rinsed Canned beans are convenient; rinse to reduce sodium.
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 piece onion, diced
  • 2 cloves garlic, minced Chop in advance to save time.
  • 1 cup beef broth Can substitute with vegetable or chicken broth.
  • 1 tablespoon chili powder Adjust according to spice preference.
  • 1 teaspoon cumin
  • Salt and pepper to taste
Optional Toppings
  • shredded cheese Adds creaminess.
  • sour cream Helps cool down the spices.
  • green onions For garnish.

Method
 

Preparation
  1. Start by browning the ground beef in a skillet over medium heat. Drain any excess fat.
  2. Transfer the browned beef to your crockpot.
  3. Add in the black beans, kidney beans, corn, diced tomatoes, onion, garlic, beef broth, chili powder, cumin, salt, and pepper.
  4. Stir all the ingredients together until thoroughly combined.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours, allowing the flavors to meld.
  2. Serve hot, garnished with your choice of toppings.

Notes

This soup freezes exceptionally well. Can be stored in the refrigerator for 3-4 days. Consider adding a bay leaf during cooking for extra flavor, and remember to remove it before serving.
