Preparation
  1. In a skillet, brown the ground beef over medium heat and drain excess fat.
  2. In a crockpot, combine the browned beef, diced potatoes, onion, carrots, and beef broth.
Cooking
  1. Cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, stir in the heavy cream and cheddar cheese, allowing it to melt.
  3. Season with salt and pepper to taste.

  1. Garnish with parsley if desired and serve warm.

Notes

For added flavor, sauté the onions and carrots before adding them to the crockpot. You can also add other vegetables like corn or green beans.
