Ingredients
  

Soup Base
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup spinach (fresh or frozen)
  • Salt to taste
  • Pepper to taste
Main Ingredients
  • 1 bag tortellini (9 oz) Feel free to use frozen tortellini.
  • 1 cup heavy cream Can substitute with coconut cream for a vegan option.
  • Parmesan cheese for serving

Method
 

Preparation
  1. In a slow cooker, mix the vegetable broth, diced tomatoes, chopped onion, minced garlic, and Italian seasoning.
Cooking
  1. Cook on low for 6-7 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, stir in the tortellini and spinach.
  3. Once the tortellini is tender, stir in the heavy cream and season with salt and pepper to taste.
Serving
  1. Serve hot, garnished with Parmesan cheese.

Notes

To enhance flavors, sauté onions and garlic before adding to the slow cooker. For variety, try adding bell peppers or a dash of hot sauce.
