  • 1 lb boneless, skinless chicken breasts Can use frozen chicken breasts.
  • 1 can white beans (such as cannellini or great northern), rinsed and drained Can substitute other beans.
  • 1 can corn, drained
  • 1 can diced green chilies Adjust spice level as needed.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cups chicken broth
  • to taste Salt and pepper
  • 1 cup sour cream Essential for creamy texture.
  • 1 cup shredded cheese (optional) For topping, can use various types.
  • as needed Chopped cilantro (for garnish)

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your crockpot.
  2. Add the rinsed white beans, drained corn, diced green chilies, chopped onion, minced garlic, cumin, oregano, and pour in the chicken broth.
  3. Season everything with salt and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  2. About 30 minutes before serving, use two forks to shred the chicken and stir in the sour cream.
  3. Serve hot, topped with shredded cheese and chopped cilantro if desired.

Notes

Serve with crispy tortilla chips, cornbread, lime wedges, and avocado for personalization. Leftovers can be stored in an airtight container for up to 4 days in the refrigerator or frozen for up to 3 months.
