  • 1 lb chicken breast (fresh or frozen)
  • 1 can white beans (cannellini or great northern)
  • 1 can corn, drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-2 green chilies, diced (adjust for heat preference)
  • 4 cups chicken broth Check for gluten-free;
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Method
 

Preparation
  1. Place the chicken breast at the bottom of the slow cooker.
  2. Add the white beans, drained corn, chopped onion, minced garlic, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper.
  3. Stir everything to combine well.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Before serving, shred the chicken with two forks.
Serving
  1. Serve hot, topped with optional sour cream, cheese, and fresh cilantro for added richness.

Notes

This chili is easily customizable. You can swap chicken for turkey or lean beef or make it vegetarian by omitting the chicken and increasing the beans and vegetables.
