  • 8 oz Cream cheese Can substitute Greek yogurt for a lighter version
  • 1 cup Corn
  • 1 can Black beans Can substitute with pinto or kidney beans
  • 1 can Diced tomatoes
Seasonings
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Preparation
  1. In your crockpot, combine the shredded chicken, cream cheese, corn, black beans, diced tomatoes, and all the seasonings.
  2. Stir everything together until well mixed.
  3. Cover the lid and set your crockpot to cook on low for 6-8 hours or high for 3-4 hours.
  4. Before you serve, give it another good stir and taste to adjust the seasoning if necessary.
Serving
  1. Serve hot, and feel free to sprinkle some cheese or fresh cilantro on top for extra flair.

Notes

Leftovers store well in an airtight container in the fridge for up to 4 days. This recipe also freezes beautifully. For enhanced flavor, sauté the onions and garlic beforehand. You can swap chicken for turkey or add different beans based on taste.
