Prepare Croissant Dough
- In a bowl, combine warm milk with yeast and sugar. Let it sit for 5–10 minutes until foamy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and knead until a dough forms.
- Roll out the dough into a rectangle, place the cold butter in the center, and fold the dough over to encase the butter.
- Roll out and fold the dough in layers, repeating this process several times to create flaky layers.
- Chill the dough for about 1 hour.
Prepare Cookie Filling
- In a large bowl, cream together the softened butter and brown sugar.
- Add in the egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together flour and baking soda, then gradually add to the wet ingredients.
- Fold in chocolate chips until evenly distributed. Set aside.
Assemble and Bake
- Preheat the oven to 375°F (190°C).
- Roll out the chilled croissant dough into a large sheet and cut into squares.
- Place a scoop of cookie filling in the center of each square and fold the dough over to seal.
- Bake for 20–25 minutes until golden brown and flaky.
- Allow to cool for a few minutes before serving.
Notes
Crookies taste best when served warm. Experiment with different fillings such as Nutella, S'mores, or fruity preserves for unique variations.
