Method
Preparing the Croissant Dough

- Final chill: Wrap the laminated dough in plastic wrap and refrigerate for at least 1 hour or overnight.
Making the Cookie Filling
- Cream the butter and sugars: In a mixing bowl, cream together the room-temperature butter, brown sugar, and granulated sugar until light and fluffy.
- Add wet ingredients: Mix in the egg and vanilla extract until fully incorporated.
- Incorporate dry ingredients: Gradually add the flour and pinch of salt along with any desired add-ins. Mix until just combined.
- Shape and chill: Scoop the cookie dough into small balls and refrigerate for 20-30 minutes.
Assembling the Crookies
- Roll out the croissant dough: Roll the chilled dough into a rectangle, about ¼ inch thick.
- Cut the dough: Cut the dough into squares or circles.
- Add the cookie filling: Place a ball of chilled cookie dough in the center of each piece of croissant dough.
- Wrap and seal: Fold the dough around the cookie filling and pinch the edges to seal.
Baking to Perfection
- Preheat the oven: Set your oven to 375°F and line a baking sheet with parchment paper.
- Arrange and brush: Place the assembled crookies seam-side down on the sheet and brush the tops with an egg wash.
