Method
Preparing the Croissant Dough
- Activate the Yeast: In a small bowl, combine warm milk, sugar, and yeast. Let it sit for 5–10 minutes until frothy.
- Mix the Dough: In a large mixing bowl, combine flour and salt. Gradually add yeast mixture, stirring until dough forms.
- Knead and Chill: Knead the dough on a floured surface for 5 minutes until smooth. Shape into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
- Incorporate the Butter: Roll the dough into a rectangle about ¼ inch thick. Lay butter sheets over two-thirds of the dough. Fold dough into thirds, like a letter.
- Laminate the Dough: Roll out folded dough, fold into thirds again. Repeat 2–3 times, chilling for 20 minutes between folds.
- Final Chill: Wrap laminated dough in plastic wrap and refrigerate for at least 1 hour or overnight.
Making the Cookie Filling
- Cream Butter and Sugars: Cream together butter, brown sugar, and granulated sugar until fluffy.
- Add Wet Ingredients: Mix in the egg and vanilla extract until incorporated.
- Incorporate Dry Ingredients: Gradually add flour, a pinch of salt, and any add-ins. Mix until just combined.
- Shape and Chill: Scoop cookie dough into small balls (about 1 tablespoon each) and refrigerate for 20–30 minutes.
Assembling the Crookies
- Roll Out the Croissant Dough: Roll chilled dough into a rectangle, about ¼ inch thick.
- Cut the Dough: Cut dough into squares or circles based on preferred shape.
- Add the Cookie Filling: Place a ball of chilled cookie dough in the center of each piece of croissant dough.
- Wrap and Seal: Fold dough around cookie filling, pinching the edges to seal.
Baking to Perfection
- Preheat the Oven: Set oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Arrange and Brush: Place crookies seam-side down on prepared baking sheet. Brush tops with egg wash for a golden finish.
- Bake: Bake for 18–22 minutes until golden brown and puffed.
- Cool and Serve: Allow to cool for 5–10 minutes before serving.
