  • 4 cups chicken broth Low sodium broth recommended.
  • 1 cup heavy cream For a rich and creamy texture.
  • 2 cups shredded cheddar cheese Feel free to use other types of cheese.
  • Salt and pepper to taste Adjust based on personal preference.
Optional Toppings
  • green onions Chopped for garnish.
  • bacon bits For an extra crunch.

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat; drain excess fat.
  2. Add the chopped onion and garlic; cook until softened.
  3. Stir in the diced potatoes and chicken broth; bring to a boil.
Cooking
  1. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. Stir in the heavy cream and cheddar cheese; cook until cheese is melted and smooth.
  3. Season with salt and pepper to taste.
Serving
  1. Serve hot in bowls, garnished with green onions and bacon bits if desired.

Notes

For a smooth texture, consider using an immersion blender partway through. The soup can also be stored in an airtight container for 3-4 days in the fridge or frozen for up to 3 months.
