For the soup base
  • 1 lb ground beef Can substitute with ground turkey or chicken.
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cups beef broth Can substitute with chicken broth.
  • 2 cups milk Use whole milk for a creamier consistency.
  • 1 cup shredded cheddar cheese Can substitute with pepper jack for a spicy kick.
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: green onions for garnish

Method
 

Preparation
  1. In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks. Drain the excess fat.
  2. Add the chopped onion to the pot and sauté until translucent, about 5 minutes.
Cooking
  1. Stir in the diced potatoes, then pour in the beef broth. Bring to a boil. Reduce heat and let it simmer until the potatoes are tender, roughly 15-20 minutes.
  2. Stir in the milk and butter, allowing it to come back to a gentle simmer.
  3. Add in the shredded cheddar cheese, stirring until it melts smoothly into the soup.
  4. Season with salt and pepper to taste, adjusting for your preference.
  5. Serve hot and garnish with green onions if desired.

Notes

This soup freezes well and can be kept for several months. Let it cool completely, then transfer it to an airtight container. Reheat by thawing overnight in the fridge and warming on the stovetop.
