  • 1 lb ground beef or Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) crushed tomatoes
  • 2 cups pasta (lasagna noodles, broken into pieces)
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper
  • 8 oz cream cheese
  • 1 cup shredded mozzarella cheese For topping
  • to taste Fresh basil for garnish

Preparation
  1. In a large pot, heat a drizzle of oil over medium heat. Brown the ground beef or sausage thoroughly.
  2. Add in the diced onion and minced garlic, cooking until they become translucent and fragrant.
  3. Pour in the broth, followed by the crushed tomatoes, broken lasagna noodles, Italian seasoning, salt, and pepper. Stir well to combine.
  4. Bring the mixture to a gentle simmer. Let it cook for about 20 minutes, stirring occasionally, until the pasta is tender.
  5. Once the pasta is cooked, stir in the cream cheese until it melts and integrates into the soup.
  6. Serve hot, topping each bowl with shredded mozzarella cheese and a sprinkle of fresh basil.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. To reheat, warm gently on the stovetop, adding a splash of broth or water if it thickens too much. This soup can also be frozen for up to three months.
