  • 4 cups hash browns (frozen or fresh)
  • 1 package (8 oz) cream cheese, softened
  • 2 cans (10.5 oz each) cream of chicken soup
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese (optional) For a cheesy flavor

  • Salt and pepper to taste
  • Chopped green onions or bacon bits (optional) For garnish

Preparation
  1. Start by adding the hash browns to your crockpot.
  2. In a separate bowl, mix together the softened cream cheese and cream of chicken soup until well combined.
  3. Pour this mixture over the hash browns in the crockpot.
  4. Add the chicken broth to the crockpot, stirring gently to combine everything.
  5. Season with salt and pepper to taste.
Cooking
  1. Cover the crockpot and set it to low for about 6-8 hours or high for 3-4 hours.
  2. Half an hour before serving, stir in the shredded cheddar cheese if desired.
Serving
  1. Once cooked, serve hot, garnished with green onions or bacon bits, if desired.

Notes

To make the soup thicker, blend a portion of it with an immersion blender or regular blender and then mix it back. Experiment with different seasonings like garlic powder or thyme for added flavor. You can substitute vegetarian broth for chicken broth to make it vegetarian-friendly. Feel free to add other vegetables, like corn or carrots, for more flavor and nutrition. You could also substitute the cream of chicken soup with cream of mushroom soup for a different taste.
