Preparation
- Gather all your ingredients including the butternut squash, ground turkey, olive oil, and seasonings.
- Preheat the oven to 400°F (200°C).
- Peel and dice the butternut squash. In a large bowl, combine it with olive oil, garlic powder, onion powder, salt, and pepper. If desired, add dried thyme.
Cooking
- Spread the coated squash on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes until tender and caramelized.
- While the squash roasts, heat a skillet over medium heat. Add the ground turkey and cook until browned, about 7-10 minutes, breaking it apart as it cooks. Season with salt and pepper.
- Once the butternut squash is done, add it to the skillet with the cooked turkey, stir well, and let it heat through.
- Serve warm, optionally sprinkled with Parmesan cheese.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for 2-3 months. Cool completely before freezing.
