  • 2 tablespoons olive oil For sautéing
  • 1 cup onion, chopped
  • 2 pieces carrots, diced
  • 2 pieces celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth Or substitute with mushroom broth for a richer flavor
  • 1 can (14.5 ounces) diced tomatoes
  • 1 piece zucchini, diced
  • 1 piece bell pepper, diced
  • 1 cup green beans, chopped
Seasoning
  • 1 teaspoon dried thyme For flavor
  • 1 teaspoon dried basil For flavor
  • Salt and pepper, to taste
Garnish
  • Fresh parsley For garnish

Method
 

Cooking Steps
  1. In a large pot, heat olive oil over medium heat until shimmering.
  2. Add the onion, carrots, and celery to the pot. Sauté until they soften, about 5 minutes.
  3. Next, add the minced garlic and continue to sauté for another minute until fragrant.
  4. Carefully pour in the vegetable broth, followed by the diced tomatoes, zucchini, bell pepper, and green beans.
  5. Season the mixture with dried thyme, dried basil, salt, and pepper to taste.
  6. Raise the heat to bring the mixture to a gentle boil, then reduce to a simmer. Allow it to cook for about 20-30 minutes, or until all the vegetables are tender.
  7. Serve your delicious soup hot, garnished with a sprinkle of fresh parsley.

Notes

Serve with crusty bread or a warm baguette. For a heartier option, add a dollop of pesto or a sprinkle of Parmesan cheese right before serving.
