  • 1 lb beef stew meat Can substitute with chunks of chuck roast.
  • 1 lb small potatoes, halved Larger potatoes can be cut into quarters.
  • 1/2 cup unsalted butter Melt for garlic infusion.
  • 4 cloves garlic, minced Adds aromatic flavor.
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme Can substitute with oregano or rosemary.
  • 1 tablespoon fresh parsley, chopped For garnish.

Preparation
  1. In your slow cooker, layer the beef stew meat along with the halved potatoes.
  2. Melt the unsalted butter in a saucepan over medium heat. Once melted, add the minced garlic and sauté until fragrant, about 1 minute.
  3. Carefully pour the garlic-infused butter over the beef and potatoes.
  4. Season the dish with salt, black pepper, and dried thyme.
  5. Cover the slow cooker and allow it to cook on low for 6 to 8 hours, or until the beef is tender and flavorful.
  6. Serve hot, garnished with freshly chopped parsley.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 to 4 days. For freezing, separate into meal-sized portions and freeze for up to 3 months. Can be prepared ahead of time and refrigerated overnight before cooking.
