- Start by adding the beef stew meat to your slow cooker. Season it generously with salt, pepper, and dried thyme.
- Layer the halved baby potatoes on top of the seasoned beef.
- In a skillet, melt the butter over medium heat. Add the minced garlic and sauté until it becomes fragrant.
- Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
- Cover the slow cooker and cook on low for 6-8 hours, or high for 4-5 hours, until the beef is fork-tender and the potatoes are cooked through.
- Once done, scoop out a hearty serving and garnish with fresh parsley.
