  • 1 lb steak: Sirloin, ribeye, or New York strip, cut into 1-inch cubes Choose tender cuts for best results.
  • 1 medium zucchini: Cut into half-moons
  • 3 tablespoons butter Use unsalted if preferred.
  • 3 cloves garlic: Minced Fresh garlic for better flavor.
  • 1 tablespoon olive oil For frying.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • Optional Fresh parsley, chopped for garnish Adds freshness to the dish.

Preparation
  1. Pat the steak bites dry with paper towels, then season them with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the steak bites in a single layer and sear for 1-2 minutes on each side until browned. Remove the steak from the skillet and set aside.
  4. Toss in the butter, and once it’s melted, add minced garlic. Sauté for about 30 seconds until fragrant.
  5. Add the zucchini to the skillet, cooking for 3-5 minutes, stirring occasionally, until tender-crisp.
  6. Return the steak bites to the skillet. Toss everything together to coat in the garlic butter, then cook for an additional 1-2 minutes until the steak is heated through.
  7. If desired, garnish with fresh parsley and serve immediately.

Notes

To enhance your meal, serve over rice or mashed potatoes, or use as filling in a tortilla for wraps. Store leftovers in an airtight container in the fridge for up to three days or freeze for a month. Reheat in a skillet to maintain texture.
