  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes Choose your favorite cut
  • 1 medium zucchini, cut into half-moons Feel free to swap in other vegetables
  • 3 tablespoons butter For the garlic butter sauce
  • 3 cloves garlic, minced Essential for flavor
  • 1 tablespoon olive oil For cooking
  • 1/2 teaspoon salt To season the steak
  • 1/4 teaspoon black pepper To season the steak
  • to taste Fresh parsley, chopped, for garnish Optional

Method
 

Preparation
  1. Pat the steak bites dry with paper towels and season them with salt and pepper to enhance the flavor.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Add the steak bites to the hot skillet in a single layer. Sear for about 1-2 minutes on each side until they achieve a beautiful brown sear. Once done, remove the steak from the skillet and set aside.
  2. Add butter to the same skillet. Once completely melted, toss in the minced garlic and sauté for approximately 30 seconds until fragrant.
  3. Incorporate the zucchini into the skillet. Cook for 3-5 minutes, stirring occasionally, until it reaches a tender-crisp texture.
  4. Return the steak bites to the skillet. Mix everything together to fully coat with the garlic butter.
  5. Finish cooking for an additional 1-2 minutes until the steak is heated through.
Serving
  1. Garnish with fresh parsley if desired and serve immediately.

Notes

Serve on a bed of rice or mashed potatoes, or with a fresh salad. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
