  • 1 cup dairy-free cream Provides a creamy texture without dairy.
  • 2 tablespoons olive oil For sautéing the onions.
  • Salt and pepper to taste
  • Herbs and spices (e.g., thyme, parsley, bay leaf) Use according to personal preference.

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  2. Add the diced potatoes, carrots, and celery to the pot, and stir everything for a few minutes.
  3. Pour in the vegetable broth and add your choice of herbs and spices. Bring this mixture to a boil, then reduce the heat and let it simmer until the vegetables are tender.
  4. Once the veggies are soft, use an immersion blender to blend the soup until you reach your desired consistency.
  5. Stir in the dairy-free cream, and season with salt and pepper to taste.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

For a richer flavor, let the soup simmer longer and adjust seasoning as needed. Consider adding lemon juice before serving for a refreshing twist. If you enjoy the soup chunky, blend only half of it and leave the rest as is.
