Ingredients
  

Vegetables
  • 4 medium potatoes, diced
  • 2 pieces carrots, sliced
  • 2 pieces celery stalks, chopped
  • 1 piece onion, chopped
Broth and Cream
  • 4 cups vegetable broth
  • 1 cup dairy-free cream (coconut or almond cream)
Seasoning
  • Salt and pepper to taste
  • Fresh herbs (like parsley or chives) for garnish

Method
 

Preparation
  1. Heat a large pot over medium heat and add a splash of oil.
  2. Sauté the chopped onion, sliced carrots, and chopped celery until they soften, about 5-7 minutes.
  3. Add the diced potatoes and pour in the vegetable broth. Bring everything to a boil.
  4. Once boiling, reduce the heat and let it simmer until the potatoes are tender, which should take around 20 minutes.
  5. Use an immersion blender to carefully blend the soup until it reaches a smooth consistency.
  6. Stir in the dairy-free cream.
  7. Season with salt and pepper to your liking.
  8. Serve hot, and don’t forget to garnish with fresh herbs.

Notes

Leftovers can be refrigerated for up to three days. For longer storage, freeze the soup in freezer-safe containers for about three months. Allow to thaw overnight in the fridge before reheating. To thicken the soup, add a tablespoon of cornstarch mixed with a little water before blending.
