Vegetable Base
  • 4 medium potatoes, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 4 cups vegetable broth Can substitute with chicken broth if not plant-based.
  • 1 cup dairy-free cream (coconut or almond cream works well) Use regular cream if not avoiding dairy.
  • Salt and pepper to taste
Garnish
  • Fresh herbs (like parsley or chives) For garnish.

Method
 

Preparation
  1. Heat a large pot over medium heat and add a splash of oil.
  2. Sauté the chopped onion, sliced carrots, and chopped celery until they soften, about 5-7 minutes.
  3. Add the diced potatoes and pour in the vegetable broth. Bring everything to a boil.
  4. Once boiling, reduce the heat and let it simmer until the potatoes are tender, which should take around 20 minutes.
  5. Use an immersion blender to carefully blend the soup until it reaches a smooth consistency.
  6. Stir in the dairy-free cream and season with salt and pepper to your liking.
  7. Serve hot, garnished with fresh herbs.

Notes

This soup stores beautifully and can be refrigerated for up to three days or frozen for about three months. Consider adding different veggies or seasonings, such as smoked paprika or jalapeño, for a twist.
