Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, sift together the cake flour and half of the granulated sugar, ensuring there are no lumps.
Mixing Egg Whites
- In a separate large bowl, begin beating the egg whites until they become frothy.
- Add the cream of tartar and salt, continuing to beat until soft peaks form.
- Gradually add the remaining sugar while still beating, continuing until you achieve stiff peaks.
Combining Ingredients
- Gently fold in the flour mixture and vanilla extract, being careful not to deflate the egg whites.
Baking
- Pour the batter into a tube pan, smoothing the top for an even bake.
- Bake for about 30-35 minutes, until the top is a lovely golden color and springs back when lightly touched.
- Once done, invert the pan onto a cooling rack and allow the cakes to cool completely before removing them.
Notes
Serve with a drizzle of fresh fruit sauce or whipped cream, and consider using fresh berries for added color.
