  • 2 cups cooked quinoa or brown rice Choose based on preference.
  • 1 cup cherry tomatoes, halved Add sweetness and color.

  • 1 red onion, diced red onion Adds flavor and color.
  • 1 bell pepper, chopped bell pepper Can substitute for zucchini.
  • 1/4 cup olives, sliced Adds a savory touch.
  • 1/4 cup feta cheese, crumbled Optional, for flavor.
  • 2 cups mixed greens Base for the bowls.
  • Olive oil, salt, and pepper to taste Essentials for seasoning.
For the Tzatziki Sauce
  • 1 cup Greek yogurt Base for the sauce.
  • 1 cucumber, shredded cucumber Adds texture.
  • 2 cloves garlic, minced For flavor.
  • 1 tbsp lemon juice For acidity.

Method
 

Preparation
  1. Season the chicken breasts with olive oil, salt, and pepper.
  2. Grill or bake the chicken until fully cooked, approximately 20-25 minutes. Slice into strips.
Mixing
  1. In a large bowl, combine the cooked quinoa (or brown rice) with cherry tomatoes, cucumber, red onion, bell pepper, and olives. Toss until well combined.
Making the Tzatziki Sauce
  1. In a separate bowl, mix Greek yogurt, shredded cucumber, minced garlic, lemon juice, and dill. Stir until smooth.
Assembly
  1. Start by placing a portion of the quinoa-vegetable mixture at the bottom of each bowl.
  2. Top with sliced chicken, crumbled feta cheese, and a generous dollop of tzatziki sauce.
Serving
  1. Serve on a bed of mixed greens and enjoy your colorful creation!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. Reheat gently to maintain juiciness.
