Ingredients
  

For the Filling
  • 1 lb ground beef Can substitute with ground turkey or plant-based protein.
  • 1 packet taco seasoning Use homemade blend if desired.
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1/2 cup nacho cheese sauce Can substitute with homemade cheese sauce.
  • 1/4 cup chipotle sauce Adjust to taste for spice preference.
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella
  • 4 large flour tortillas Warm for flexibility.
  • to taste Butter or oil for grilling

Method
 

Cooking the Beef
  1. In a skillet heated over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
  2. Add the taco seasoning along with 1/4 cup water and let it simmer for about 5 minutes.
Warming the Tortillas
  1. Warm the tortillas on a dry skillet or microwave for a few seconds for flexibility.
Assembling the Burrito
  1. Lay a tortilla flat and layer it with rice, seasoned beef, nacho cheese, chipotle sauce, and sour cream.
  2. Sprinkle the shredded cheddar and mozzarella on top before rolling it up.
Grilling the Burrito
  1. Heat a clean skillet and sprinkle 2 tablespoons of shredded cheese onto it.
  2. Place the burrito seam-side down and grill until the cheese melts, forming a crispy crust.
  3. Flip and repeat until both sides are golden brown, about 3-4 minutes per side.

Notes

Serve cut in half with guacamole, salsa, or pico de gallo. Store leftovers in an airtight container in the refrigerator for 2-3 days. Can be frozen for up to three months.
