Ingredients
  

For the marinade
  • 3 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 juice of 1 lemon
  • to taste salt and pepper
For the chicken hearts
  • 1 pound chicken hearts, cleaned
  • lemon wedges for serving

Method
 

Preparation
  1. Combine olive oil, garlic, smoked paprika, cumin, salt, and pepper in a bowl. Add chicken hearts and toss to coat. Marinate for at least 30 minutes.
  2. Thread chicken hearts onto metal or wooden skewers.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Grill skewers for 2–3 minutes per side, until cooked through.
  3. Squeeze fresh lemon juice over the hearts before serving. Pair with rice or a chimichurri sauce.

Notes

Chicken hearts cook quickly. Overcooking can make them tough and chewy. Aim for an internal temperature of 165°F (74°C). Serve with bold sides for a complete meal.
