- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a skillet, sauté diced onion and garlic until fragrant. Add ground beef and cook until browned. Drain excess fat.
- Stir in corn, diced tomatoes (if using), chili powder, cumin, salt, and pepper. Simmer for a few minutes to let flavors meld.
- In a bowl, prepare the cornbread batter by mixing the cornbread mix with eggs and milk. Optionally fold in some creamed corn for added moisture.
- Spread the beef mixture evenly in the prepared baking dish.
- Spoon the cornbread batter over the beef layer and spread gently to cover.
- Top with shredded cheese if using.
- Cover with foil and bake for 25–30 minutes. Uncover and bake another 10–15 minutes until the cornbread is golden and filling is bubbly.
- Let the casserole rest for 5–10 minutes before slicing and serving.
Notes
For variation, try a Mexican twist with black beans and jalapeños or a sweet-savory combo by adding a drizzle of honey to your cornbread mix.
