  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups frozen mixed vegetables Fresh vegetables can be substituted.
  • 2 medium potatoes, diced
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper Season gradually.
  • Bread for serving Crusty bread or warm rolls recommended.

Preparation
  1. In a large pot, brown the ground beef over medium heat, breaking it up as it cooks.
  2. Once browned, drain the excess fat.
  3. Add the chopped onion and minced garlic. Sauté until softened.
  4. Pour in the beef broth and add the diced tomatoes.
  5. Toss in the frozen mixed vegetables and diced potatoes.
  6. Bring everything to a boil, then reduce the heat and let it simmer for about 20–30 minutes or until the potatoes are tender.
  7. Stir in the Italian seasoning along with salt and pepper to taste.
  8. Serve hot, accompanied by your favorite bread.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for longer storage. To adjust thickness, add more broth or water as necessary.
