Ingredients
  

For the Filling
  • 2 cups fresh blueberries You can substitute with frozen blueberries
  • 1/4 cup maple syrup You can substitute with agave syrup
  • 1/2 teaspoon vanilla extract For added flavor
For the Topping
  • 1 cup rolled oats
  • 1/2 cup almond flour Can substitute with whole wheat flour
  • 1/4 cup coconut oil Must be melted
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup Remaining portion for topping
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the blueberries, half of the maple syrup, and vanilla extract. Toss gently.
  3. In a separate bowl, mix together the rolled oats, almond flour, cinnamon, melted coconut oil, the remaining maple syrup, and a pinch of salt until crumbly in texture.
  4. Spread the blueberry mixture evenly in the bottom of a baking dish.
  5. Evenly distribute the oat mixture on top of the blueberries.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until you see a golden brown top.
  2. Remove from the oven and let cool slightly before serving.

Notes

Best served warm with Greek yogurt or vanilla ice cream. Drizzle with extra maple syrup for a fancier touch.
