Brownie Ingredients
  • 1 cup black beans, rinsed and drained
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup may substitute agave if desired
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Optional Frosting
  • 1/2 cup Greek yogurt
  • 2 tablespoons cocoa powder
  • to taste sweetener

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a food processor, add the rinsed and drained black beans, and blend until smooth.
  3. Add cocoa powder, honey (or maple syrup), melted coconut oil, vanilla extract, baking powder, and salt. Blend until you have a creamy mixture.
  4. Pour the brownie batter into your prepared baking pan, spreading it evenly.
Baking
  1. Place in the oven and bake for 20-25 minutes, or until the edges start to pull away from the sides of the pan.
Optional Frosting Preparation
  1. If you’re adding frosting, mix Greek yogurt, cocoa powder, and sweetener until smooth.
  2. Allow brownies to cool before spreading the frosting on top, if desired.
Serving
  1. Slice into squares and enjoy!

Notes

These brownies can stand alone or be enhanced with toppings such as low-calorie vanilla ice cream, chopped nuts, or berries. For an indulgent touch, drizzle melted dark chocolate over the frosting. Store in an airtight container at room temperature for up to 5 days or in the refrigerator for up to a week. Freeze for up to 3 months.
