  • 1 cup grated carrots Grate finely for better texture.
  • 1/2 cup unsweetened applesauce Can be substituted with mashed bananas or pumpkin puree.
  • 1/4 cup honey or maple syrup Maple syrup for a vegan option.
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or raisins (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, grated carrots, applesauce, honey (or maple syrup), and vanilla extract until everything is well combined.
  3. Add the ground cinnamon, nutmeg, baking powder, and salt, and mix until fully incorporated.
  4. If you like, stir in the chopped walnuts or raisins for added texture and flavor.
  5. Drop spoonfuls of the dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Let cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. They freeze well for several months.
