Healthy Mushroom Stuffed Chicken Breast

Ingredients
  

For the Filling
  • 1 cup mushrooms, finely chopped (button, cremini, or shiitake)
  • 1/4 cup spinach, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 cup shredded mozzarella cheese (or feta for a tangy twist) Optional cheese
  • 1/2 tablespoon olive oil
  • 1 tablespoon butter or olive oil
  • 1/2 teaspoon dried oregano
  • 1 tablespoon grated Parmesan cheese (optional)
For the Chicken
  • 2 large boneless, skinless chicken breasts
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Toothpicks or kitchen twine For securing the chicken

Method
 

Prepare the Filling
  1. Heat 1/2 tablespoon of olive oil in a pan over medium heat.
  2. Add chopped mushrooms and sauté for about 5 minutes until they are golden brown.
  3. Stir in minced garlic, chopped spinach, dried thyme, and salt. Cook for an additional 2 minutes.
  4. Remove from heat and mix in mozzarella cheese. Set aside to cool slightly.
Prepare the Chicken
  1. Slice through the thickest part of each chicken breast to create a pocket.
  2. Stuff with half of the mushroom filling and secure with toothpicks.
Sear and Bake
  1. Heat the remaining 1/2 tablespoon of olive oil in an oven-safe skillet.
  2. Season the outside of each chicken breast with paprika, salt, and pepper, and sear for 2-3 minutes on each side.
  3. Preheat the oven to 375°F (190°C), then transfer the skillet and bake for 15-18 minutes.
Finish with Flavor
  1. Melt butter in a pan, stir in dried oregano, and drizzle over baked chicken, optionally garnishing with grated Parmesan.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze before baking for up to 2 months.
