  • 2 cups cooked chicken, shredded Feel free to substitute with leftover rotisserie chicken.
  • 1 cup salsa verde
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
Seasoning
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Garnish
  • Fresh cilantro For garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, salsa verde, black beans, corn, cooked rice, half of the cheese, cumin, garlic powder, salt, and pepper until well mixed.
  3. Pour the mixture into a greased 9x13-inch baking dish and spread it evenly.
  4. Sprinkle the remaining cheese over the top.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbly.
Serving
  1. Remove from the oven and garnish with fresh cilantro before serving.

Notes

Serve it with crispy tortilla chips, a fresh side salad, avocados, or guacamole. For variations, try adding sautéed onions, bell peppers, or different types of cheese.
