Ingredients
  

For the Raspberry Sauce
  • 1 cup raspberries (fresh or thawed frozen)
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
For the Cream Cheese Mixture
  • 8 oz cream cheese, room temperature
  • 1/3 cup granulated sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
For the Brownie Batter
  • 1 cup all-purpose flour (or gluten-free blend)
  • 3/4 cup Dutch-process cocoa powder, sifted
  • 1/4 teaspoon salt
  • 3/4 + 2 tablespoons refined coconut oil or a neutral oil
  • 1 1/2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 3 large eggs, room temperature

Preparation
  1. Prepare the Raspberry Sauce: In a saucepan over medium heat, combine raspberries, 1 tablespoon of sugar, and 1 teaspoon of vanilla. Simmer for about 5–8 minutes until thickened. Strain to remove seeds and set it aside.
  2. Make the Cream Cheese Mixture: Beat the cream cheese with 1/3 cup of sugar until smooth. Add in the egg and 1/2 teaspoon of vanilla, mixing until creamy and well combined.
  3. Whisk Dry Ingredients: In a separate bowl, whisk together the flour, sifted cocoa powder, and salt.
  4. Mix the Brownie Batter: In another bowl, mix oil, 1 1/2 cups of sugar, and 1 tablespoon of vanilla extract. Stir in the eggs one at a time, mixing well after each addition. Combine this mixture with the dry ingredients just until blended.
  5. Layer the Mixtures in a Pan: Spread the brownie batter evenly in a lined baking pan. Pour the cream cheese mixture on top and dollop the raspberry sauce over it. Create swirls using a skewer or knife.
  6. Bake: Preheat your oven to 350°F (175°C) and bake for 30–35 minutes. Once baked, allow them to cool completely and then chill in the fridge for about 2 hours.
  7. Cut and Serve: Cut into heart shapes and enjoy!

Notes

To store any leftover brownies, place them in an airtight container in the refrigerator for up to a week or freeze wrapped pieces for up to three months. Chilling helps set the cream cheese layer and intensifies the flavors.
