- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, diced carrots, and celery; sauté them until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
Cooking
- Next, add the chicken, chicken broth, green beans, corn, diced tomatoes, thyme, oregano, salt, and pepper to the pot.
- Bring everything to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes or until the chicken is fully cooked.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Taste your soup and adjust the seasoning if necessary.
- Serve hot, garnished with chopped parsley.
Notes
Feel free to swap in different vegetables or proteins based on what you have on hand. This soup can also be made in a slow cooker by cooking on low for 6-8 hours.
