Method
 

Preparing the Potatoes
  1. Peel and cube the potatoes into evenly sized cubes (about 1 inch).
  2. Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
  3. Bring the water to a boil, then reduce the heat and simmer for 10-15 minutes, or until the potatoes are fork-tender.
  4. Drain the potatoes and let them cool to room temperature.
Preparing the Dressing
  1. In a mixing bowl, whisk together Hellmann’s Real Mayonnaise, mustard, and relish.
  2. Add a pinch of salt and pepper, adjusting to taste.
Assembling the Salad
  1. Add the cooled potatoes to the bowl with the dressing. Gently toss to coat the potatoes evenly.
  2. Fold in the celery, onions, and chopped eggs carefully.
  3. Cover and refrigerate for at least 1 hour.
Garnishing and Serving
  1. Before serving, sprinkle the salad with parsley or paprika.
  2. Serve cold.

Notes

Cool potatoes completely before mixing. Store in an airtight container for up to 3 days. Avoid freezing.
