Ingredients
  

Broth Ingredients
  • 1 handful fresh mint Use fresh for best flavor.
  • 1 handful fresh coriander Use fresh for the best taste.
  • 1 handful spinach Fresh or frozen can be used.
  • 3 cloves garlic
  • 1 small knob fresh ginger
  • 1 bunch spring onion Use whites for broth and greens for topping.
  • 1 unit lime Juice for the broth.
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp agave syrup
  • 1 tbsp mushroom stir-fry sauce Optional.
  • 1 tbsp miso paste Optional.
  • 400 ml coconut milk
  • 700 ml vegetable stock
Toppings
  • 1 unit carrot For topping.
  • 1 unit asparagus For topping.
  • 1 unit (Purple sprouting) broccoli For topping.
  • 1 unit oyster mushrooms For topping.
  • 1 unit red chilli For topping.
  • 1 pack noodles of choice
  • to taste unit toasted sesame seeds For topping.
  • to taste unit crispy chilli oil For additional heat.

Method
 

Preparation
  1. Peel and add the garlic, ginger, fresh herbs, and spinach to a food processor or blender. Add a splash of water if needed to loosen the mixture, then blitz until smooth.
  2. Incorporate the peanut butter, soy sauce, lime juice, agave syrup, coconut milk, and any additional seasonings. Blend until everything is perfectly combined.
Cooking
  1. In a large pot, combine your blended mixture with the vegetable stock and bring it to a gentle simmer.
  2. While the broth simmers, cook the noodles according to the package instructions.
Serving
  1. Ladle the fragrant broth over the noodles and garnish with sliced carrots, asparagus, broccoli, oyster mushrooms, red chilli, toasted sesame seeds, and a drizzle of crispy chilli oil.

Notes

Leftovers can be refrigerated for up to 3 days. Store in an airtight container. For best texture, store noodles separately and add fresh when serving. Fresh herbs are preferred but dried can be used in smaller amounts. Experiment with spices or additional flavors to suit your taste.
