Ingredients
  

For the Ricotta Filling
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
For the Chicken
  • 4 pieces boneless, skinless chicken breasts Flattened for rolling
  • 1 cup marinara sauce
  • 1 tablespoon olive oil For searing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the ricotta cheese, Parmesan, parsley, basil, minced garlic, salt, pepper, and Italian seasoning. Mix well.
  3. Place each chicken breast between sheets of plastic wrap and flatten them to an even thickness with a meat mallet.
  4. Spread the ricotta mixture evenly over each flattened chicken breast.
  5. Roll each chicken breast tightly and secure the ends with toothpicks.
Cooking
  1. Heat olive oil in a skillet over medium heat. Sear the chicken rolls until golden brown on all sides, about 3-4 minutes per side.
  2. Transfer the chicken rolls to a baking dish and pour marinara sauce over the top.
  3. Bake in your preheated oven for 25-30 minutes, or until the chicken is fully cooked.
  4. Remove toothpicks before serving.

Notes

For a gourmet presentation, plate the chicken rolls on a bed of marinara sauce and garnish with extra parsley or basil. Consider serving with roasted vegetables, garlic bread, or a fresh salad.
