For the Quesadilla
  • 1 piece low-carb tortilla
  • 1/2 cup cooked shredded chicken Feel free to use any cooked chicken.
  • 2 tablespoons Greek yogurt Can be substituted with sour cream.
  • 2 wedges Laughing Cow cheese Use dairy-free cheese for a dairy-free option.
  • 1 tablespoon ranch seasoning Store-bought or homemade can be used.
  • as needed Cooking spray or olive oil For cooking in the skillet.

Method
 

Preparing the Filling
  1. In a bowl, mix together the shredded chicken, Greek yogurt, ranch seasoning, and Laughing Cow cheese until everything is well combined.
Cooking the Quesadilla
  1. Heat a non-stick skillet over medium heat and spray with cooking spray or drizzle in a little olive oil.
  2. Place the low-carb tortilla in the skillet and spread the chicken mixture evenly on half of the tortilla.
  3. Fold the tortilla over to form a half-moon shape.
  4. Cook for 3-4 minutes on each side, or until the quesadilla is golden brown and the cheese has melted.
  5. Slice into wedges and serve warm.

Notes

This quesadilla is best enjoyed fresh, served with guacamole, salsa, or a crisp green salad. Leftovers can be stored in an airtight container in the fridge for up to three days or frozen for longer storage.
