Ingredients

Pasta and Meat
  • 8 oz Dry Macaroni Feel free to use whole wheat or chickpea pasta for a healthier twist.
  • 1 lb Lean Ground Beef Substitutes include ground turkey or chickpeas for a plant-based option.
Vegetables
  • 1 cup Chopped White Onion Yellow onion is a suitable alternative.
  • 2 cloves Minced Garlic Freshly minced garlic enhances the flavor immensely.
  • 2 cups Bell Peppers Red, green, or yellow—mix them up based on your preference.
Creamy Sauce
  • 2 tablespoons Butter Swap it for olive oil for a lighter choice.
  • 8 oz Light Cream Cheese Regular cream cheese can be used for a richer result.
  • 1 cup Shredded Mozzarella Any favorite melting cheese works.
  • 4 slices Light Cheese Slices Other good melting cheese slices can replace these as well.
Seasonings
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • 1/2 teaspoon Chili Flakes Adjust based on your spice preference.
  • 1/4 cup Fresh Parsley Optional for that finishing touch.

Method

Preparation
  1. Boil your pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add chopped onions and minced garlic, sautéing until they’re fragrant and the onions become translucent.
  3. Add in the ground beef (or your preferred substitute) and cook until browned. Make sure to break it up while cooking for even texture.
  4. Toss in the chopped bell peppers, and sauté until they’re slightly tender.
  5. Reduce the heat to low. Stir in the cream cheese, creating a creamy mixture. Gradually add in the mozzarella, stirring until melted and smooth.
  6. Incorporate the cooked macaroni into the skillet. Mix well to ensure all pasta is coated in the creamy sauce.
  7. Season with salt, pepper, paprika, and chili flakes. Stir to combine, and let cook for a few more minutes.
  8. Serve hot, garnishing with fresh parsley if desired. Enjoy your delicious creation!

Notes

For extra flavor, consider adding a splash of Worcestershire sauce during the cooking of the beef. Customize the heat by experimenting with different types of cheeses or adjusting the amount of chili flakes. Sneak in some spinach or other greens for added nutrition.
